Warm a large saucepan or casserole dish over medium–low heat and add a generous glug of olive oil. Add the onion, carrot, celery, garlic, bay leaves, chilli flakes (if using) and a pinch of salt. Cook for 20–⏱️ 25 minutes, stirring every so often, until softened and glossy.

Stir in the lentils, then pour in the water. Bring to the boil, reduce to a gentle simmer and cook for 30–⏱️ 35 minutes, until the lentils are tender.

Add the pasta, cover with a lid and cook for 10–⏱️ 12 minutes, until al dente. Taste and adjust the seasoning as needed.

Divide between bowls and top with a handful of rocket, a drizzle of olive oil and plenty of black pepper.
