Cosy Cranberry & Apple Crumble
This cranberry and apple crumble is the perfect pudding to make for friends and family during the festive season. It’s filled with juicy cranberries, apples and a cosy maple topping. This is another fantastic recipe that you can prep-ahead to help you get organised at Christmas, simply prepare the crumble up until the point of baking, and pop it in the fridge (or freezer) until needed.

Preheat the oven to 160°C fan / 350°F.

Place the apple, frozen berries, cranberries, maple syrup, orange zest and juice in a large saucepan set over medium heat. Simmer for 15–⏱️ 20 minutes until glossy and reduced by about half.

To make the topping, simply place all of the topping ingredients in a bowl and mix until combined.

Once the fruit has cooked, transfer to a baking dish. Pour the crumble mixture on top of the fruit.

Bake for 20–⏱️ 25 minutes, until golden and your kitchen smells delicious. Delicious served with plant-based custard or ice cream.
