Cosy Butter Beans with Roasted Squash
These cosy butter beans are hearty, wholesome and simple to make. They’re teamed them up with roasted squash and earthy greens for a super satisfying bowl. Simply roast the squash, simmer the beans, and serve with extra-virgin olive oil and peppery watercress.

Preheat the oven to 180°C fan / 400°F. Place the squash on a large, shallow baking tray, drizzle with 1 tablespoon olive oil and season generously. Nestle the garlic between the squash. Roast for 30—⏱️ 35 minutes until tender and golden.

Meanwhile, warm the remaining 1 tablespoon of olive oil in a shallow casserole dish set over medium heat. Add the leek, celery and bay leaf, then cook for 10—⏱️ 15 minutes until softened.

Stir in the beans, along with the stock from the jar and vegetable stock. Season generously and simmer for ⏱️ 5 minutes.

Add the Cavolo Nero and simmer for 4—⏱️ 5 minutes until wilted. By this time, the squash should be cooked. Remove the garlic and carefully squeeze it into the beans.

To serve, divide the beans into shallow bowls, top with the squash, a handful of watercress, a drizzle of olive oil and a generous grind of black pepper.
