Cosy Apple Turnovers

Preheat the oven to 200°C fan / 420°F. Tip the hazelnuts onto a baking tray; roast for 6–⏱️ 8 minutes until deeply golden. Remove from the oven and roughly chop (or roughly crush in a pestle and mortar).

Place the cooking apples, mixed spice and maple syrup in a saucepan set over medium heat. Cook for 5–⏱️ 10 minutes, stirring often, until tender but not mushy — watch carefully as the cooking time will vary.

Stir in the nuts, cornflour, the eating apple and a splash of water until slightly thickened. Remove from the heat and set aside to cool.

Roll out the pastry (leaving it on the sheet of paper that it’s rolled up in) on a shallow baking tray. Cut into 6 rectangles and add a spoonful of the apple mixture to each one. Fold the pastry over to make a triangle and press the edges together to seal — using a fork to crimp them if you like. Brush with milk and poke a few holes in the top to let the steam escape. Scatter over the sesame seeds and coconut sugar (if using).

Bake for 25–⏱️ 30 minutes until crisp and golden. Serve with creamy coconut yoghurt or plant-based ice cream.
