Coronation Cauliflower Salad
This is such a delicious take on a traditional coronation salad. The turmeric, curry powder and lime juice add an incredible kick which perfectly compliments the sweetness of the maple and the crunch of the cashews. We love to add this to our weekday lunchboxes.

Preheat the oven to 220C (390F), fan setting.

Place the quinoa into a pan over a medium heat and cover with 400ml boiling water.

Add 1 teaspoon of turmeric and cook for ⏱️ 20 minutes until all of the water has gone and the quinoa becomes soft.

Cut the cauliflower into small florets and place onto a baking tray.

Mix with 1 tablespoon of curry powder, 1 teaspoon of cinnamon, a drizzle of olive oil and salt and cook for ⏱️ 10-15 minutes until charred on the outside and cooked on the inside.

Once the quinoa has cooked, place into a large bowl and grate in the carrot.

Add the cooked cauliflower, rocket, raisins, maple, toasted cashews, lime juice, tahini and a pinch of salt.

Mix really well so everything is coated in all of the spices before serving.
