Lay 8 slices marbled rye or pumpernickel bread on a sheet pan. Distribute ½ pound cooked and sliced corned beef evenly on top of half of the slices of bread. Add 4-8 slices Swiss cheese, using 1-2 slices to top the corned beef. Broil on high for ⏱️ 1-2 minutes until the cheese melts.

Make the coleslaw by combining 2 cups thinly shredded cabbage, ¼ cup mayonnaise, 1 tablespoon granulated sugar, and 1 tablespoon lemon juice in a medium bowl. Place on top of the melted cheese.
