For the corn muffins: Preheat the oven to 400°F. Spray a 12-cup muffin tin with cooking spray.

In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.

In a medium bowl, whisk together the buttermilk, butter, honey, and eggs until well combined. Pour the buttermilk mixture into the cornmeal mixture, whisking until just combined.

Fill each prepared muffin cup until almost full (about ⅓ cup batter in each). Bake until the tops are golden brown and a toothpick inserted in the center of a muffin comes out clean, 17 to ⏱️ 22 minutes. Let cool in the muffin tin for ⏱️ 5 minutes before removing the muffins to a wire rack.

For the honey butter: Meanwhile, in a medium bowl, whisk together the butter and honey until well combined. Serve the muffins warm with the honey butter.
