Preheat the oven to 400°F (200°C).

On a floured surface, roll out the rough puff pastry to ¼-inch (6 mm) thick circle and line a 10 ½-inch (27 cm) tart pan with it.

Line the crust with parchment paper, fill with dried beans or pie weights and blind bake the crust for ⏱️ 15 minutes. (note below)

Remove the parchment paper and beans or pie weights and let the pastry cook about ⏱️ 5-10 minutes longer, until the pastry is golden all over, and then remove from the oven (leave the oven on).

While the pastry is baking, cook the sausage in a medium skillet over medium heat until done. Set aside.

To assemble the tart, sprinkle the cheese over the pastry, then add the cooked sausage and the cherry tomato halves.

Finally, crack the eggs on top of everything, sprinkle salt and pepper and return to the oven until the egg whites are set and the yolks are baked to your liking, about ⏱️ 14-18 minutes. Serve while still warm.

Store leftovers covered in the refrigerator for up to one day. Reheat in a 300°F (150°C) oven for ⏱️ 10 minutes.
