1. Make the lime sugar. On a shallow plate, combine the lime zest, sugar, and a pinch of salt.2. Make the mojito. Rub the rim of a tall glass with a lime wedge. Dip the glass into the lime sugar, pressing to adhere. Fill the glass with ice.In a cocktail shaker, combine 2 lime wedges, the mint, and sugar (if using). Muddle the ingredients together, squishing on them to release their aroma and juices. Add the white rum, coconut rum, and vanilla. Fill with ice and shake vigorously until combined, about ⏱️ 30 seconds.3. Add the coconut cream and shake for another ⏱️ 30 seconds.4. Strain into the prepared glass. Top with the beer, then gently stir to combine. Garnish with a mint sprig and the remaining lime sugar.
