Coconut & Apricot Oat Bars
This recipe inspired our coconut & oat on-the-go bars. We love the chunks of chewy dried apricot, they give so much texture and flavour along with the oats and desiccated coconut.

π Preparation Steps

Preheat oven to 180C (350F), fan setting. Line a baking sheet with baking parchment.

In a large bowl, mix together the coconut shavings, desiccated coconut, dried apricots and oats.

Place the coconut oil, sunflower oil, coconut blossom nectar and brown rice syrup in a small pan over a medium heat and cook until melted and slightly bubbling, but donβt bring to the boil.

Pour the melted mix over the dry ingredients and mix well to combine. Transfer the mixture to the baking tray and press down very well, making sure it is all evenly spread.

Bake in the oven for β±οΈ 12-14 minutes until golden.

Once baked, remove from the oven and leave to cool before cutting into equal bars.
