Classic Mince Pies
Mince pies are one of my favourite festive treats. The pasty is light and sweet, while the filling is filled with juicy fruity textures and flavours. I like making extra of the filling and serving it on porridge, it may sound strange but it tastes so delicious!

Place all of the filling ingredients into a pan over a medium heat and cook for ⏱️ 35-40 minutes until soft and all comes together. You may need to add a splash of water every now and again to keep it from burning on the bottom.

While the filling is cooking, make the pastry by placing all of the ingredients into a food processor and pulsing until it all comes together to form a dough. Spoon the dough out onto a slightly floured work surface and knead a little with your hands, not a lot - only to bring the dough together. Once the dough is nice and firm, place into the fridge to cool.

Once the filling mixture is ready, and the dough has had time to cool - preheat oven to 180c, fan setting and lightly oil a 12 hole muffin tray.

Roll the pastry out onto a lightly floured work surface and roll out flat using a rolling pin until about 1cm thick.

Cut 12 large circles into the pastry and place into the muffin tray holes, push each down around the edges to form a cup shape. Reroll the remaining pastry and using a small circle or star cookie cutter, cut out 12 smaller pastry circles/stars.

Spoon equal amounts of the filling into each pastry cup before covering with a smaller pastry circle/star. Brush with almond milk.

Cook for ⏱️ 10-15 minutes until golden.
