Classic Lemon & Coconut Sugar Crêpes
These spelt crêpes feature a classic combination of lemon juice and sugar — we love to make them for a great weekend breakfast. They're also delicious with chocolate sauce, fresh fruit or maple syrup.

Place the flour in a bowl and mix well to remove any lumps. Pour in the almond milk, melted coconut oil and maple syrup. Mix well until a smooth batter forms.

Place a large frying pan over medium heat and add a little coconut oil. Once melted, pour in ¼ of the mixture, moving the pan around to create a large, round crêpe.

Cook for a few minutes until the bottom feels set. Then flip over and cook on the other side until cooked through. Spoon onto a plate and repeat with the remainder of the batter.

Serve with a squeeze of lemon juice and a sprinkle of coconut sugar.
