Place chocolate in a heat-safe bowl. Heat 1 1/4 cups heavy cream in a small saucepan over medium low heat until just steaming. Pour over chocolate; let sit for ⏱️ 5 minutes, then whisk until smooth. Cool slightly.

Combine egg yolks and sugar in a bowl. Whisk with an electric mixer on high speed until thickened, pale yellow, and creamy, 3 to ⏱️ 5 minutes. Stir in vanilla, salt, and liqueur, if desired. Add one-third of egg mixture to chocolate mixture and stir until combined. Add remaining egg mixture and stir until smooth.

Whisk remaining 1 1/4 cups heavy cream with an electric mixer on high speed until stiff peaks form, 3 to ⏱️ 5 minutes. Fold whipped cream into chocolate mixture. Spoon into cups or ramekins; refrigerate at least ⏱️ 6 hours or overnight. Serve topped with whipped cream and chocolate shavings.
