Whisk together your flour, sugar, baking powder, and salt in a large bowl. Make sure you whisk it well so the baking powder is evenly distributed. This ensures your pancakes rise evenly and you do not get any bitter clumps.

In a separate bowl, combine your milk, egg, melted butter, and vanilla extract. Whisk this mixture until the egg is fully broken down and incorporated into the milk.

Pour the wet ingredients into the bowl with the dry ingredients. Stir them together until they are just combined. It is okay if there are a few small lumps left in the batter. Overmixing can make the pancakes tough, and we want them soft and fluffy.

Place a non stick skillet over medium heat. You want the pan to be hot but not smoking. Lightly grease it with a little butter or oil. If the pan is too hot, the outside will burn before the inside is cooked.

Pour about 1/4 cup of batter onto the skillet for each pancake. Watch the surface of the batter closely. You will see little bubbles start to form and pop.

Once you see those bubbles and the edges look set, flip the pancake. Cook the other side until it is golden brown. It usually takes just another minute or two. They should look fluffy and tall.

Remove the pancakes from the skillet while they are still hot. Immediately sprinkle them generously with the cinnamon sugar. The heat from the pancake will help the sugar stick and melt slightly. Repeat this with the remaining batter until you are done.
