Preheat oven to 350 degrees. Lightly spray an 8x8" baking pan with non-stick spray, set aside.

In a large bowl combine oats, flour, sugar, baking powder, cinnamon and salt.

Next, add in egg, applesauce and vanilla until just combined.

Fold in peaches.

Spread oat mixture evenly into baking pan, lightly packing it down, and bake for ⏱️ 30 minutes.

Remove from oven and cut into 6 pieces.
