Cut eggs in half and remove yolks. Puree yolks, avocado, mayonnaise, mustard, horseradish, in a food processor until smooth, 2 to ⏱️ 3 minutes. Add food coloring and pulse to combine. Season with salt and pepper.

Transfer to a pipping bag fitted with a star-shaped tip. Pipe mixture back into egg whites creating Christmas tree shapes. Chill.

Peel pepper then cut into wide strips, removing any pith and seeds. Cut out 24 star shapes using a small star-shaped plunger. Top trees with stars and lightly sprinkle with smoked paprika.
