In the bowl of a stand mixer fitted with a paddle attachment, beat the softened butter and sugar until fluffy. Add the egg yolks, vanilla, zests, and lemon juice, and mix until combined. Use rubber spatula to scrape the bowl, then mix again. Add the sifted flour and mix until combined.

Place dough in a zip-top bag and refrigerate for at least ⏱️ 1 hour, or until firm.

When ready to bake the cookies, preheat oven to 300°F. Cut the candied cherries in half.

Roll the dough into small balls and place on a cookie sheet lined with parchment paper or a baking mat. Gently press the cherry halves, cut side down, into each ball.
