Chopped Tomato, Basil & Olive Salad
This simple, throw-together salad is low on effort and big on flavour. For speed, the spiced chickpeas are cooked in the same time that it takes to prepare the vegetables. The addition of fragrant basil and chopped black olives also makes this summery salad decidedly moreish.

Heat oven to 220°C / 200°C fan / 428°F. Place the chickpeas, olive oil, paprika, a pinch of flaky sea salt and chilli (if using) onto a baking tray and mix with your hands until the chickpeas are coated. Bake for ⏱️ 20 minutes until crisp, tossing halfway through so they cook evenly. Leave to cool completely.

Place all of the salad ingredients into a bowl and toss through the chickpeas. Drizzle over olive oil and top with extra basil.
