Make the cookies: Pulse walnuts in food processor until finely chopped, 12 to 14 times. Beat butter, brown sugar, and confectioners’ sugar with an electric mixer on medium speed until creamy, 2 to ⏱️ 3 minutes, scraping sides of bowl as needed. Beat in egg, vanilla, and salt. Reduce mixer speed to low, and gradually beat in flour and walnuts just until combined. Cover and chill ⏱️ 1 hour.

Preheat oven to 400°F. Lightly grease walnut cookie molds. Roll mixture into teaspoon-size balls. Press into prepared mold. Bake, in batches, until golden brown and set, 18 to ⏱️ 20 minutes. Cool in mold ⏱️ 2 minutes. Carefully remove cookies to wire racks. Rinse mold under cool water, dry, and lightly grease mold before continuing with additional batches.

Make the walnut filling: Beat butter, walnut butter, and 2 tablespoons heavy cream with an electric mixer on medium speed until combined and creamy, about ⏱️ 1 minute. Beat in vanilla and salt. Reduce mixer speed to low, and gradually beat in confectioners’ sugar and cocoa powder. Increase speed to medium and beat until well-combined and smooth, ⏱️ 30 seconds to ⏱️ 1 minute. Beat in an additional tablespoon heavy cream if filling is too dense.

Spoon filling (about 1 tablespoon each) into half of walnut shells. Top with remaining cookies to form sandwiches.
