Preheat oven to 350°F. Lightly grease a 9-inch-square baking pan. Whisk together flour, cocoa powder, baking soda, salt, cinnamon, and baking powder in a bowl.

Beat egg, brown sugar, and vanilla with an electric mixer on medium speed until light in color, 1 to ⏱️ 2 minutes. Beat in mayonnaise just until combined. Beat in flour mixture alternately with coffee, beginning and ending with flour mixture, just until combined. Transfer batter to prepared pan.

Bake until a wooden pick inserted into center comes out clean, 24 to ⏱️ 26 minutes. Cool on a wire rack ⏱️ 10 minutes.

Whisk together evaporated milk, sweetened condensed milk, and 1/2 cup cream. Pierce top of cake several times with a wooden skewer. Slowly pour milk mixture over cake (about 1/3 cup at a time), allowing mixture to soak into cake. Cool completely.

Beat remaining 1 cup cream on high speed, ⏱️ 1 minute. Gradually add confectioners’ sugar and beat just until soft peaks form, about ⏱️ 1 minute. Spread evenly over cake and garnish with chocolate curls.
