Chocolate Rice Crispy Cakes
We're obsessed with this adaptation of rice crispy cakes, and they couldn't be simpler to make! The sticky, sweet, peanut-butter mixture is so delicious, especially when dipped in the warm chocolate coating.

📝 Preparation Steps

Place the brown rice syrup, maple syrup and peanut butter into a small pan over a medium heat until it begins to bubble.

Once it begins to bubble, turn down the temperature and cook for a further ⏱️ 5 minutes, stirring occasionally.

Place the puffed rice into a large bowl and pour over the warm syrup.

Mix well until the mixture comes together, before spooning into a lined baking tray.

Push the mixture down using your hands until it is evenly spread across the tray.

Place the tray in the fridge for at least ⏱️ 3 hours to set.

To make the chocolate topping; place all of the ingredients into small pan over a low heat.

Heat the mixture until all of the cacao butter melts. Once melted, remove from the heat and allow to cool for ⏱️ 30 minutes.

Once the rice crispy cakes have set in the fridge, remove and cut into even squares.

Dip the squares into the chocolate sauce while still warm and leave on a baking rack to set.
