Chocolate Peanut Butter Oat Bars
If you love the combination of peanut butter and banana, these easy flapjacks are for you. They’re soft, chewy, naturally sweetened with fruit and finished with a thick layer of dark chocolate and a pinch of flaky sea salt – although you can leave this out if you’re cooking with children.

Preheat the oven to 160°C fan / 320°F. Line a 20 x 20 cm / 8 x 8” baking tin with baking parchment.

Add the bananas, peanut butter, melted coconut oil and dates to a food processor and blitz for a few minutes, until smooth.

Add the oats and cinnamon and blitz very briefly, until just combined. Transfer the mixture to the lined tin and press down into an even layer. Bake for 20–⏱️ 25 minutes, until just firm and golden.

Remove from the oven and leave to cool in the tin on a wire rack. Meanwhile, melt the chocolate and coconut oil in a heatproof bowl in the microwave on low setting, or in a bain-marie. Pour over the flapjack and smooth into an even layer.

Chill in the fridge for ⏱️ 1 hour, until the chocolate has set. Use a sharp knife to slice into squares. Sprinkle over the flaky sea salt (if using) before serving.
