Make the chocolate sauce by placing all of the ingredients into a pan over a low heat. Cook until it has melted into a smooth sauce. You can add a little more milk if needed until you reach the consistency you like best.

To make the pancakes, whisk together the flour, cocoa powder and chia seeds in a medium bowl and whisk until no lumps remain. Make a well in the centre, pour in the almond milk, maple syrup and coconut oil. Gently whisk to combine, then fold through the chocolate chips.

Place a frying pan over medium high heat and add the coconut oil. Once warm, spoon a large tablespoon of the pancake batter into the pan. Using a wooden spoon to spread out the mixture.

Cook on one side for 3–⏱️ 4 minutes until golden, before turning and cooking on the other side for 2–⏱️ 3 minutes. Repeat until all of the batter has been used up.

Serve drizzled with the chocolate sauce and fresh berries, if desired.
