Chocolate Ice Cream With Maple Caramel
This ice cream is great to enjoy in the hot or cold weather. The ice cream itself is rich and chocolatey, while the maple caramel sauce adds a sweet, delicious flavour. We love to serve the maple caramel warm and drizzle it all over the top, but it's also great to enjoy cold.

Place the pitted, chopped dates into the bowl of a food processor. Process until smooth and then gradually add the almond milk in a steady stream. Continue to process until a smooth paste forms - this can take up to ⏱️ 10 minutes. Stop to scrape down the bowl as you go.

Once a smooth paste has formed, add in the cacao powder and almond butter. Pulse again until it comes together to form a thick, creamy mixture.

Add the chocolate chips and mix well to ensure they are evenly mixed through.

Pour the mixture into a container, seal and freeze overnight.

Once ready to serve, make the maple caramel. Place all of the ingredients into a pan over a medium-low heat and stir continuously until melted, ensuring not to let it come to the bubble - this should take around ⏱️ 5 minutes.

Scoop large spoonfuls of the ice cream into bowls and top with the caramel sauce. We also like to top with nuts or granola, but you can top with anything else you like.
