Line a 900g / 2 lb loaf tin with parchment paper. Set aside.

Place the peanut butter, maple syrup, coconut oil, cacao powder and salt into a pan over a low heat. Cook, stirring often, for ⏱️ 4-5 minutes until a thick syrup has formed. Remove from the heat and allow to cool slightly.

Once cool, pour the mixture into a food processor and add the dates - pulse for ⏱️ 2 minutes until smooth and creamy, stopping to scrape down the sides of the bowl as needed.

Pour the mixture into the prepared loaf tin and smooth over, sprinkle with the chopped nuts and fruit, and place in the fridge to set for ⏱️ 1-2 hours.

Once set, cut into small pieces.
