Arrange the bacon slices in a single layer on the foil-lined baking sheet and bake until crisp (not chewy), 25 to ⏱️ 30 minutes. Transfer to a paper towel–lined plate or baking sheet and lightly pat the bacon with a paper towel to remove excess grease.

Using a silicone pastry brush, generously brush both sides of each bacon slice with the melted chocolate, leaving about 2 inches at one end uncovered. Place the slices on the parchment-lined baking sheet.
