In a medium bowl, stir together the flour, salt, baking soda, and instant coffee. With the mixer on low speed, gradually add the flour mixture, mixing until just combined. Remove the bowl from the mixer and stir in the chocolate using a wooden spoon or rubber spatula.

Spread the cookie dough into the prepared pan in an even layer. Bake until set and golden, 25 to ⏱️ 30 minutes. Allow to cool slightly in the pan, about ⏱️ 15 minutes. Remove the cookie to a cutting board and cut into 12 squares.
