Chocolate Chip Brownie
These chocolate chip brownies are the ultimate weekend bake – rich, fudgy, indulgent and just perfect. They make the kitchen smell delicious too! We've topped ours with some of our chocolate dipped almonds, but you can chocolate chips, chunks of nuts, dried fruit or berries.

Place the chia seeds into a small bowl and mix through 4 tablespoons of water. Leave to one side to thicken up for ⏱️ 10 minutes.

Preheat the oven to 180C (355F), fan setting. Line a baking tray with baking paper.

In a large bowl, mix together the flour, coconut sugar, ground almonds, cacao powder, bicarb and baking powder. Mix well until there are no lumps.

Pour in the almond milk, melted coconut oil and chia mixture, and mix again until a thick batter forms.

At this point, mix through 1 bar of the chocolate, chopped into pieces.

Spoon the mixture into the lined baking tray and top with the remaining chocolate chips (or whatever you are using for the topping).

Cook for ⏱️ 25-30 minutes until a knife inserted into the middle comes out clean but still a little fudgy. If not fully cooked, place back in the oven for 5-10 more minutes.

Once cooked, remove from the oven and leave to cool a little before serving.
