Chocolate Brownie Cake
Enjoy this rich and indulgent brownie cake after dinner — serve it warm with a large dollop of coconut yoghurt or scoop of ice cream on the side. We love to drizzle melted dark chocolate over the top for all-out chocolate decadence, but it’s also delicious without.

Preheat oven to 200°C / 180°C fan / 400°F and grease a 20cm / 8″ round cake tin with oil and line the base with baking parchment.

Melt ½ of the chocolate, either in short bursts in the microwave or in a heatproof bowl over a pan of simmering water; then leave to cool slightly.

Tip the self-raising flour, ground almonds, cacao powder, coconut sugar and pinch of salt in a bowl and mix. Pour in the melted chocolate, soya milk and oil; mix until you have a smooth batter. Fold in most of the remaining chopped chocolate, reserving a handful to decorate.

Pour the batter into the lined tin, level with the back of a spoon and scatter over the remaining chocolate chunks. Bake for 20–⏱️ 22 minutes until the cake has set around the edges and has a little wobble in the middle. Sprinkle with a little extra flaky sea salt and leave to cool completely in the tin before removing carefully.
