Chilli, Mango & Green Bean Salad
This bright, zesty salad is one of our favourite things to make on warm days. It’s super crunchy and fresh – with juicy mango, crisp green sugar snap peas and spiced chilli oil. Perfect for a barbeque with some grilled tofu skewers and cooling tahini yoghurt.

Warm a drizzle of olive oil in small frying pan set over medium—low heat. Add the chilli, mustard seeds and cumin seeds. Warm gently until the oil just simmers, then remove from the heat and set aside to cool.

In a large salad bowl, toss together the mango, green beans, sugar snap peas, lime juice, mint and a generous pinch of salt.

Once cooled, stir in the spiced chilli oil and adjust the seasoning as needed.

To serve, scatter over a pinch of chilli flakes (if using) and the remaining mint leaves. Delicious as part of a barbeque, picnic or a light summer supper.
