Chilli & Chive Pancakes
This simple savoury pancake recipe promises to become your go-to speedy lunch or dinner. Place the gram flour into a bowl and slowly pour in the water, whisking until the mixture is smooth with small bubbles on the surface.

Then stir in the chilli, chives, lemon juice, salt and pepper and whisk.

Heat a drizzle of olive oil in a small frying pan (around 20cm / 8″). Once warm, pour in ½ of the batter.

Cook for 2–⏱️ 3 minutes, until the upper side is no longer runny. Then flip and cook for a further ⏱️ 2 minutes.

Then repeat with the remainder of the batter, to create 2 pancakes.

To serve, place the pancakes onto a plate and top with pesto, rocket, cherry tomatoes, a drizzle of oil and a sprinkle of chives and red chilli.
