Leftovers of our chickpea, tofu & harissa stew go perfectly with noodles for a quick and filling lunch. We have used rice noodles here but you can use any noodles you like – soba noodles or even pasta would also work well.

Cook noodles according to packet instructions.

While the noodles are cooking, reheat the chickpea, tofu & harissa stew. This can be done in a small saucepan on the hob, stirring frequently for about ⏱️ 5 minutes. Alternatively, reheat in the microwave, covered, in 1-minute intervals until piping hot.

When the noodles are cooked and the stew is hot, mix them together and serve immediately. Top with fresh coriander if desired.
