Chicken Street Corn Bowls

In a medium bowl, combine 1 tbsp freshly squeezed lime juice, 1 tbsp avocado oil, 1 tsp chili powder, 1 tsp ground cumin, 1/2 tsp garlic powder (or fresh minced garlic), 1/2 tsp salt, and 1/4 tsp ground black pepper. Whisk to create a paste.

Add 4 boneless, skinless chicken thighs to the bowl, toss to coat. Cover and refrigerate for 15 to ⏱️ 30 minutes.

Heat a skillet over medium-high heat. Add a touch of oil if needed, then place the chicken thighs in the skillet.

Sear chicken for 8 to ⏱️ 10 minutes per side, until cooked through and nicely browned. Remove to a cutting board and let rest for 5 to ⏱️ 10 minutes, then slice into strips.

While chicken cooks, mix 1 cup sweet corn kernels, 1/4 cup sliced red onion, 1/2 cup sour cream, 2 tbsp mayonnaise, 1/2 cup crumbled Cotija cheese, and 1 tsp chili powder in a clean bowl.

Season the corn mixture with salt, pepper, and 1 tbsp lime juice to taste. Stir until well combined.

Warm up 3 cups of prepared rice in a microwave-safe bowl or small saucepan until warm and fluffy. Fluff with a fork.
