Preheat the oven to 400˚. Roll out the puff pastry into an 10-by-11-inch rectangle. Cut in half lengthwise and then into thirds crosswise to make 6 rectangles. Lay a sausage crosswise on each piece of pastry and roll up, starting with a short end. Roll over the seam to seal the pastry.

Place the wrapped sausages on an unlined, ungreased baking sheet, seam-side down, and brush with the beaten egg. Sprinkle with flaky salt, poppy seeds or everything seasoning. Bake until the pastry is golden brown and puffed, about ⏱️ 30 minutes. Let cool for 5 to ⏱️ 10 minutes.

Meanwhile, mix the mustard, maple syrup and mayonnaise in a small bowl. Cut each sausage into 4 pieces with a sharp knife. Serve with the maple mustard.
