Bring the quinoa and water to a boil, reduce the heat and simmer, covered, until the water has been absorbed, about ⏱️ 15 minutes, before removing from heat and letting sit covered for ⏱️ 5 minutes.

Meanwhile, melt the butter in a small sauce pan over medium heat and let it froth until it just starts to turn a light golden brown.

Sprinkle in the flour and let cook while whisking until it just starts to turn a light golden brown, about ⏱️ 2-3 minutes.

Add the milk and simmer while whisking until it thickens, about ⏱️ 2-3 minutes.

Mix in the cheese, mustard and worcestershire sauce, season with salt, pepper and cayenne to taste and remove from heat.

Mix the quinoa, chicken, ham and sauce, pour into a baking dish, top with the mixture of the butter, parsley and breadcrumbs and bake in a preheated 350F/180C over until lightly golden brown on top and bubbling on the sides, about ⏱️ 20-30 minutes.
