Combine the cherries and sugar in a large saucepan. Bring to a slow boil over medium heat and cook until the cherries are soft and the liquid is syrupy, 10 to ⏱️ 15 minutes. Let cool to room temperature.

Add the cherries and their juices to a blender or food processor. Blend until smooth, stopping short of totally liquefying it if you’d like a little texture. Add the milk, cream, booze and lemon juice and blend until just combined.

Churn the mixture in an ice cream maker according to the manufacturer’s instructions, then scrape into an airtight freezer-safe container and freeze at least ⏱️ 24 hours.
