Remove the steaks from the refrigerator 30 to ⏱️ 60 minutes before cooking to bring them to room temperature.

Season both sides of each steak generously with salt.

Heat a cast-iron frying pan large enough to hold both steaks over medium-high heat until it begins to smoke just a bit. Drizzle with enough oil just to coat the pan. Place the steaks in the hot pan and raise the heat to high. Cook until the bottoms of the steaks are deep golden brown, 2 to ⏱️ 3 minutes. Flip the steaks and cook until the other side is browned, about ⏱️ 2 minutes longer.

Sprinkle the steaks with a little sugar and season generously with pepper. Flip the steaks again, and then reduce the heat to medium. Add the butter to the pan, and then season the steaks with the hot-pepper sauce. Cook, swirling the pan and spooning the butter over the steaks, until the butter browns and the steaks are done to your liking, about ⏱️ 4 minutes for medium-rare. Transfer the steaks to a cutting board and let rest for ⏱️ 5 minutes (if you can wait that long!) before slicing and serving.
