Place the potatoes in a large pot and fill with water until just covered. Bring to a boil, then reduce heat and simmer until soft and cooked through.

In a separate saucepan or pot, pan-fry the green onions in olive oil until soft. Add the diced tomatoes, cover, and simmer for about ⏱️ 10 minutes, or until a sauce forms.
