Wash and peel potatoes. Cut them in to big chunks and place them in to a pot with cold water. Add 1 bay leaf and 1/2 Tbsp of salt. Cook for ⏱️ 15 min on medium high heat until they can be pierced with a fork, but are not fully cooked. Drain potatoes and place them in a large bowl.

While potatoes are cooking, cut pork in to small chunks. Add some oil to large skillet and cook pork for ⏱️ 7-10 min. Half way through, add 1 Tbsp of soy sauce and mix well. Once pork starts to brown, remove from heat.

Next, mince 3 cloves of garlic and saute on medium high heat until it starts to brown. Be careful not to burn it. Stir frequently. After garlic is done cooking, remove it to a separate bowl, add more olive oil and saute onion in the same skillet until it is golden brown.

Start preheating oven to 350°F.

In a big mixing bowl, combine cooked potatoes, onion, garlic, 1/4 cup of fresh dill, 1 cup of heavy whipping cream, 1 Tbsp of Mrs. Dash seasoning and gently mix everything together.

Empty mixture into a large rectangular baking dish and top with cooked pork. Cover baking dish with foil and place in to preheated oven for ⏱️ 15 min.

While potatoes are baking, shred 1 cup of mozzarella cheese.

After ⏱️ 15 min are up, take potatoes out of the oven, remove foil, and sprinkle them with mozzarella cheese. Set oven to broil and put the dish back for ⏱️ 2 min to melt the cheese. !You are done, it goes great with canned pickled tomatoes.
