Heat the oil in a large pan over medium heat, add the chicken and cook, breaking it apart as it cooks, for ⏱️ 5 minutes.

Add the garlic and taco seasoning and cook until fragrant, about a minute.

Add the broth, tomatoes, and pasta, bring to a boil, reduce the heat and simmer until the pasta is tender, about ⏱️ 8-10 minutes, mixing every few minutes.

Mix in the sour cream and half of the cheese and let it melt into the sauce.

Sprinkle on the remaining cheese and let it melt. (Cover with a lid and let it cook for ⏱️ 2-3 minutes or throw it under the broiler.)
