Preheat Oven to 375°F (190°C)

Blanch the green beans in boiling water until tender yet crisp, then shock them in ice water to preserve their bright color.
Green Beans, trimmed and cut into halves or thirds1 pound

In a fry pan, cook the diced bacon over medium to low heat until it releases it’s fat making sure you do not burn the lean part of the bacon. In the same skillet, add the mushrooms, salt and pepper and sauté them until they release their moisture and become light golden brown. Add the ham and cook for a couple minutes.

In another saucepan, melt the butter and whisk in the flour to create a roux and cook it for a couple minutes. Gradually add the milk while whisking continuously for another couple minutes. Add the Brie and the Cheddar, nutmeg and cook at very low heat until smooth and thickened.

Add the cooked bacon, ham, mushrooms and adjust salt and pepper as needed.

Combine the green beans ensuring they are well coated.

Transfer the mixture to a greased 2-quart (2L) baking dish, top with parmesan and bacon bits if desired, and bake for ⏱️ 20 - 25 minutes, or until bubbling and heated through.
