Cook the beef in a large saucepan, over medium-high heat, breaking it apart as it cooks, before setting aside and reserving 4 tablespoons of grease in the pan.

Add the onion, celery, and carrots and cook until tender, about ⏱️ 7-10 minutes.

Add the garlic and paprika , mix, and cook until fragrant, about a minute.

Sprinkle in the flour, mix well and cook for a minute.

Add the broth, beef, potatoes, Italian seasoning, and worcestershire sauce, bring to a boil, reduce the heat and simmer until the potatoes are tender, about ⏱️ 20 minutes.

Add the sour cream and cheese, mix, and let the cheese melt into the broth.
