Preheat oven to 220°C / 200°C fan / 390°F.

Place the chickpeas in a baking tray with the olive oil, the spices and salt. Mix well until everything is coated.

Place in the oven for 25–⏱️ 30 minutes until the chickpeas are crispy. Once cooked, remove and leave to one side.

Toss the cauliflower in the spices, salt and olive oil. Cook in the bottom of the oven for 35–⏱️ 40 minutes.

Warm the tortillas through (either in the oven or on the hob) before loading up with a dollop of coconut yoghurt, cauliflower, crispy chickpeas, a handful of lettuce, pinch of chilli flakes and hot sauce (if using).
