This cauliflower and chestnut soup makes a great Christmas starter. Thick, creamy with a delicious subtle flavour from the chestnuts, we love to serve it with large chunks of sourdough bread on the side.

Place a pan over medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt; cook for ⏱️ 10 minutes until soft.

Once soft, add the chestnuts (saving 1 or 2 for the top), spices and cauliflower pieces, cook for ⏱️ 10 minutes until the cauliflower begins to soften.

Pour in the coconut milk and bring everything to the boil. Once boiling, reduce the heat and simmer for ⏱️ 30 minutes until the cauliflower feels completely soft.

Using a hand blender or a powerful food processor, blitz until smooth.

Pour back into the pan and warm over medium heat. Season with salt and black pepper before serving.

Top with your favourite toppings; we love to serve this with sliced chestnuts, a dollop of coconut yoghurt and freshly ground black pepper.
