Saute peppers and onions with the sausage in the cast iron skillet over medium heat.

Shred 2-3 red potatoes using a cheese grater. Approximately 1 cup.

Whisk the eggs, milk salt and pepper in a small mixing bowl.

Stir potatoes in with the sausage and veggies, then pour the eggs over the top.

Bake @ 375°F for ⏱️ 30 minutes; after that, top with cheese and continue baking an additional ⏱️ 10 minutes or until cheese is melted and eggs are set up.
