Cashew Cream
Think of this as a plant-based crème fraiche. A really handy condiment to keep in the fridge to add richness and body to a multitude of sauces and dishes throughout the week. We use it in our very veggie pasta; and turn it into a creamy tahini sauce for our winter roots panzanella, our winter roots salad bowl, and our nori tacos. It keeps well in the fridge for up to a week so you can easily double this recipe and save some for later.

Place the drained cashews, oat milk, lemon juice and garlic in a high-speed blender and blitz until smooth and creamy. Add salt to taste. Keeps well in the fridge for up to a week.
