For the Carrot Cake

Preheat oven to 350 degrees F.

Combine the dry ingredients in a medium bowl, mix well.

In a larger bowl add the eggs, oil, and grated carrots. Mix; then add the dry mixture and chopped walnuts and mix until well combined.

Line a 13x9" sheet pan with parchment paper; then pour the batter over the pan. Spread it out with a spatula so that it's evenly distributed; then bake for ⏱️ 35-40 minutes. (The top should bounce back with gently touched or a toothpick inserted into the middle comes out clean).

Remove the tray and allow to cool completely at room temperature (approximately ⏱️ 30 minutes); then spread the cream cheese icing evenly on top and cut into 35 squares.

Add all ingredients to a mixing bowl; then using a handheld electric mixer blend until smooth and creamy. (This icing makes 1 cup and you can keep it sealed in a container in the refrigerator until ready to use).
