Heat oil a large skillet over medium-high heat. Fry the bacon until crispy. Drain off some excess fat, keeping about 1 teaspoons worth in the pan. Add the onion and garlic and fry until onion is transparent (about ⏱️ 1 minute).

Reduce heat to low. Add shrimp and let cook for ⏱️ 1 minute, while stirring occasionally.

Pour in half and half (or cream) and add in parmesan cheese. Bring the sauce to a gentle simmer for ⏱️ 1 minute. Season with a little salt and pepper to your taste and let cook until the parmesan cheese has melted, the shrimp are cooked through and the sauce has thickened slightly.
