Make the caramel: Melt the butter in a small saucepan over medium heat. Add the brown sugar and heavy cream and bring to a simmer, stirring. Reduce the heat to medium low and simmer gently until the sugar is dissolved and the caramel is bubbly, about ⏱️ 4 minutes. Remove from the heat and set aside to cool slightly, 15 to ⏱️ 20 minutes.

When the caramel is warm (not hot), beat the cream cheese in a large bowl with a mixer on medium speed until smooth and fluffy, about ⏱️ 2 minutes. Beat in three-quarters of the caramel until incorporated. Spoon into a serving bowl.
