Preheat your oven to 425 degrees F; then spray a little cooking spray in the bottom of a 1qt. baking dish.

Assemble the chicken roll ups by first placing a slice of cheese on top of the chicken, then add the tomato slice and a whole basil leaf. Roll up the chicken, secure with a toothpick and place seam side down in the baking dish. Repeat for all pieces of chicken.

Next, drizzle the vinegar on top of the chicken, season with salt and pepper; then bake for ⏱️ 25-30 minutes until the chicken is cooked through (minimum internal temperature 165 degrees F, but I prefer 180 degrees F).
